Happy Birthday, Dear Tom


This doodle looks like it would be the scene for a wonderfully romantic birthday evening, doesn't it?

Perfect for Tom (and me) then!

Tom has chosen Strawberry Cake. He truly loves it. And it's easy.

I have taken to baking the cake from Tres Leches Cake in 9" pans. Then you horizontally cut the layers so that you've got four thin layers of cake. Macerate 48 ounces of strawberries with plenty of sugar. (Maceration is the process of softening fruit by soaking it in a liquid coating it with sugar to draw out natural juices, forming a syrup.) 

 Construct with layers of strawberries, syrup, and freshly whipped cream (3 c. cream whipped with 1/2 cup powdered sugar). Delicious.

Perhaps I should say the above Google looks perfect for a celebratory evening since we will not be alone.

We've got a wonderfully participatory family ranging from 1-1/2 to 5 and all the way up to 72. It will be a real party!

  1. I keep reading about this cake and then going to the other website and reading about the actual cake and I'm left wondering... What syrup are we talking about here when we layer the strawberries and whipped cream? Thanks. Jane M

    1. When you combine the strawberries and sugar the juice is drawn out and becomes a sweetened strawberry syrup.

    2. Also the other recipe in this context is solely important for the cake layers. Nothing else is applicable here. :-)

    3. Thank you! I note that you did mention syrup in the original post and I ignored it because it was in parentheses. That'll teach me... I also guess you mean that you are substituting strawberries, syrup and all, for the 'tres leches' poured over the cake. It would get pretty soggy with both.

    4. Incorrect. As I mentioned in the previous comment - you are only using the Tres Leches recipe to make the cake layers. IGNORE EVERYTHING about the Tres Leches recipe except for the recipe for the sponge cake. That is the only thing from that recipe that is being used for the Strawberry Cake.
